This vegan quesadilla or TFF “Dilla” from Thought For Food’s Dude, Where Do You Get Your Protein book will definitely not leave you hungry. There are some days I just crave it! I use canned vegetarian refried beans, whole wheat low-carb tortillas and don’t usually include the salsa because I’m just lazy. I have had it many times with the salsa though, and it’s equally as good. It just depends on what you’re in the mood for. Simple to make, but oh so satisfying is what you’ll get with this recipe, plus the rest of the information in the book is great as well in answering the “Where do you get your protein” question that most vegans get at some point or another.
