That’s why I was so glad to find these Keto Gingersnap Cookies from ruled.me. They offer that gingersnap flavor without using a heavy sweetener. Since we can’t use almond flour, I substituted sunflower seed flour, and they tasted fine. That’s why mine look a little different than those pictured in the recipe. If almond flour isn’t an issue for you, I would try that first before substituting other flours. While they were certainly good on the first day, I thought they were even better on the second and third days.
